I discovered this fudge in Poland, a place many people consider the fudge capital of the world.
The first bite surprised me. The outside had a delicate sugary crust, but the centre was soft, smooth and almost caramel-like. It’s created through a slow crystallisation process that gives the fudge its distinctive texture.
I tasted a lot of fudge that day. This was the one I decided to bring back.
